Tarpon are not good eating. Very bony and not so tasty. They're a game fish to begin with. I would not dare eat one. I was born and raised in Corpus Christi Texas and am 40 years old and have been fishing with my dad since i was a little kid. Trust me when i tell you that you do not want to eat a tarpon. Nastiest tasting fish in the world.
